Temperature Control

To protect yourself from steam burns when taking the temperature of hot
liquids such as custards, curds or jams, place an instant-read thermometer
in the
opening of a slotted spoon. Hold the spoon handle and dip the thermometer
into the liquid.

That's a really good idea. That would work very well with our Braille Meat thermometer. I would find this especially helpful for warm tort fillings that need to be brought almost to a boil, but not quite and then quickly chilled.
